A Taste of Dominica: Traditional Island Dishes at The Palisades Restaurant

Renowned for its flavorful seafood and breathtaking panoramas of the Caribbean Sea, The Palisades Restaurant is Roseau’s only seaside restaurant and the premier dining destination at Fort Young Hotel. Celebrating the local flavors of the island, our oceanfront eatery boasts an extensive menu of both classic and modern dishes. Here are a few of the local and visitor favorites.

Fisherman’s Cove

The cuisine in Dominica centers around the local herbs and spices available and in-season on the island. The popular Fisherman’s Cove dish is a seafood stew inspired by the island’s abundant natural bounty, offering a rich flavor that incorporates spicy paprika, light lime and saffron.

Fort Nut Soup

This dish was inspired by the Caribbean favorite, Callaloo Soup. Made from an array of greens, this soup is an island classic with an ingredient list that varies from household to household. And, while the recipe has various adaptations, the core ingredient remains the same: callaloo, a leafy spinach-like vegetable. Typically, the callaloo is stewed with fresh coconut milk, ginger, carrot, ham bone and okra to create a hearty dish often served with baked bread.

Lionfish Bon Femme

In Dominica, caring for the environment is a priority. One of the most popular fish dishes that you will see across the country is lionfish. An invasive species that disrupts the local marine ecosystem, the lionfish is a popular fish to hunt and utilize in island dishes. The Lionfish Bon Femme is the the catch as the star of the plate. Served on top of a fresh pile of vegetables and Basmati rice, you can enjoy the seasoned fish in a light, refreshing way.
