Top Tastes: Our Guests’ Favorite Bites & Sips at Palisades Restaurant

Dining at Palisades Restaurant is one of the best ways to satisfy all of our senses at once. Here, with breathtaking ocean views at Roseau’s only seaside restaurant, it doesn’t get any better than being able to see, smell, (nearly) touch and hear exactly where your food came from — all while you indulge your fifth sense with incredible tastes. Here are some of our guests’ favorite dishes and drinks, all made with freshly sourced local ingredients.

Favorite Bites

Lionfish Ceviche

Abundant in Dominica’s waters, lionfish is prepared many different ways on the island. Our specialty is Lionfish Ceviche. Cured in fresh orange juice and seasoned with ginger, coconut, chiles, red onion and other herbs, this appetizer is not to be missed. (P.s. If you go fishing during your stay, you’ll have the opportunity to catch lionfish on your own!)

Fort Nut Soup

Despite the name, there are no actual nuts in this soup. Instead, it’s a creamy, savory, sweet and slightly spicy purée of carrots, ginger and Callaloo Coconut. A must try!

FYH Surf & Turf

The best of both worlds, the FYH Surf & Turf is a meal you won’t soon forget. Grilled lobster and beef tenderloin take center stage, while a twice baked potato, sautéed vegetables and curry hollandaise treat your taste buds to a delicious show.

Vegan Rasta Stew with Festival Dumplings

Palisades Restaurant caters to vegetarians and vegans alike with a variety of delectable dishes. This stew, in particular, is a favorite among even the biggest carnivores. Red beans, pumpkin, tomatoes, kale and yams make for a savory, with a hint of sweet, comfort food.

Tamarind Cheesecake

A little tart, a little nutty, but perfectly sweet, tamarind makes a beautiful complement to the traditional cheesecake flavor. More often than not, our guests save room for this special treat.

The Flaming “sweetplowsion”

The Flaming “sweetplowsion” is a gorgeous way to try some of the island’s best flavors in one dish. The base is a fresh carrot-ginger cake, and then it’s topped with banana flambé, volcanic pineapple gateau and coconut tartlet. 

Favorite Sips

Balas Martini

Crafted with Southern Comfort, rather than vodka or gin, this martini is pleasantly unique. Cointreau, cranberry juice and lime juice offer a refreshing spin.

Caribbean Yellow Bird

This is the drink our guests picture when they imagine a tropical paradise. Made with a base of banana liqueur, rum and fresh juices, it’s always a treat.

Margaritas 

Our guests love traditional margaritas, but they’re partial to our rotating margarita flavors. Inspired by local fruits and herbs, our bartenders whip up special flavor combinations sure to satisfy.
